However, after many back-and-forths with QLogic support, it turns out the new driver uses a new name for the extended error logging option;
esxcfg-module -s ql4xextended_error_logging=1 qla4xxx
Furthermore, to get information about what options ESX modules support, you can issue this command to get a list;
vmkload_mod -s qla4xxx
